Apple peels

This is a first time for us on the farm to make apple butter so in doing the research we found a recipe that said to leave apple peels and cores in as they contain natural pectin that makes the apple butter set up on its own. We fed the farm animals the left over Apple matter after we used a food ricer by hand to turn the 15 pounds of apples into 24 cups of apple butter. This afternoon we will finish cooking the apple butter with organic sugar , spices to finish the apple butter. Then we will do the canning.
