When we committed to raising our own pork we committed to using the whole animal it’s about respecting their sacrifice so I am going to be on a cooking marathon for the next several days my good friend Nancy White is coming from yucca valley to help me can. I am making pork head broth they say pastured organic pork heads make the richest broth loaded with vitamin D, I am also going to render down the leaf lard for our cooking oil they say pork lard can handle high heat for frying and is great for baking, then I will use this beautiful roast and make the best pork chili verde if you notice our pork does not look anything like commercial pork ours looks more like beef happy healthy pasture raised animals make the best flavor and healthiest food
